Tie Guan Yin, also known as 'Iron Goddess of Mercy', is a premium variety of Chinese Oolong Tea and is also one of China's most famous Oolong teas. Tie Guan Yin is associated with Anxi in Fujian Province China.
Tie Guan Yin is typically close to a Green Tea , with only a little oxidization. Consequently, it has a very flowery, delicate aroma without the green tea "grassiness" or astringency.
The processing of Tie Guan Yin tea is complex and requires expertise. Even if the tea leaf is of high raw quality, and is plucked at the ideal time, if it is not processed correctly its true character will not be shown. This is why the method of processing Tie Guan Yin Tea was shrouded in secrecy.
We have 4 different types of Tie Guan Yin graded from A to D. All vary in price depending on their quality. A is rated as being our best quality Tie Guan Yin.
How to brew

Use freshly drawn cold water

Boil water & allow to cool for 4 to 5 minutes to about 80℃

Use 3g tea leaves in a 350ml cup

Steep for 1 to 2 minutes (or to your taste)

Infusions: at least 3 times – don't remove the leaves from the mug, as once the water level is low, simply add more water and keep going until the flavour of the tea is gone

Brewing vessel: Glass cup, gaiwan, glass or porcelain pot
